Ossenworst (ox sausage), is a raw beef product which is succulent, strong-flavored and salty in taste on account of its heavy spice blend. Due to its raw nature, ossenworst is actually tastiest when consumed fresh on the day.
Ossenworst is a traditional product from Amsterdam, which has its origins in the 17th century, at a time when a large number of oxen were being imported from Germany and Denmark. Ox meat was used for the sausages, which explains their Dutch name, which literally translates as 'ox sausage'. The spices which were added to these sausages originated from the Dutch East Indies, where the Dutch occupied a strong trading position. In the Amsterdam harbor, these spices were combined with the ox meat, and at the time some pork was also added. Eventually, the pork component was no longer added in order to gain popularity within the Jewish community. Nowadays, ossenworst may be made from both oxen or cows, but this does not take anything away from the quality or distinctiveness of the product.
