Fricandeau or pork silverside, does not contain many additives. It is therefore more natural and has a neutral flavor. Fricandeau has a lot in common with pork roulade, which has undergone a similar grilling process. Fricandeau is in general a little more tender, coarser and has a more neutral taste when compared to pork roulade. Fricandeau is also a little coarser than pork roulade because it is cooked at slightly lower temperatures. This gives fricandeau a slightly more pink color. Fricandeau is a real luxury product, and for this reason is sometimes considered to be the 'roast beef of pigs', with which it has much in common in terms of coarseness and preparation.
Fricandeau is a single product, which means it comes from whole cuts of meat. The cut is different for each fricandeau.
This product at Compaxo
We think that fricandeau has to be a luxurious food item, and for that reason the highest quality cut must be used. Our fricandeau is thus made, naturally, of the silverside. We treat our fricandeau with a similar process to the pork roulade, whereby it is cooked at a low temperature for a long period of time.
Next to Fricandeau, we at Compaxo can also make cuts of meat from other parts of the animal other than the silverside. We are also able to offer a sliced version of the fricandeau.
Recommendations and facts
Due to its neutral taste, fricandeau can be superbly combined with all sorts of food. Shine a spotlight on its luxurious character with additions such as truffles, roughly milled pepper, capers and watercress. The dominating flavors of such ingredients are an ideal addition to the neutral taste of the pork silverside.
