This actually sits somewhere between the boerenmetworst and the Alsace cervelat in the dried sausage family tree. In terms of flavor, it is similar to both, only the slice caliber (diameter) is larger than the boerenmetworst, and it is also ground more coarsely than the Alsace variety. It is also the case here that the farmer's cervelat may be drier than the Alsace cervelat, as coarser pieces lose moisture easier.
At the time that this product was being developed, farmers thought that both their appearance and their conduct was 'rough'. The structure of the sausage was also rough/coarse, so 'farmer' was added to the name of this product. This is a variety of the standard cervelat, hence its name.

Ordinarily, farmer's cervelat is sold in a large caliber, sliced or unsliced. Other cuts are also possible on request.
