The dried sausage product group has always played a prominent role within Compaxo, and this is reflected in approximately 120 years of experience. In the past, Compaxo's sausage makers strove to stimulate the drying process in a variety of creative ways.

Chorizo is characterized by its red exterior, and belongs to the sausage varieties in which a preservation process has taken place beforehand. This product distinguishes itself from other products by the addition of a Mediterranean spice blend.


Chorizo, just like cervelat, is made up of offcuts left over after the butcher completed processing of the meat, and a comparable drying process also takes place. The product originates from Spain, where it received its red-colored property due to the addition of paprika. The sausage's spicy flavor comes from the hearty blend of spices used. Local variations on chorizo were later made in Mexico and various Caribbean countries. It is a popular meal and tapas component in Mediterranean cuisine.

Unlike traditional chorizo, our chorizo has a slightly milder Mediterranean spice blend, which manifests itself in a relatively mild spicy flavor. This decision was made based on the fact that the average Dutch person has less of a taste for spicy foods. Compared to our cervelat, this sausage also has a slightly less sour taste. Our chorizo has an orange-red color, which stems from the spices which have been used.


Compaxo offers the possibility to have this product delivered in a variety of formats. Considering the fact that this is originally a Spanish product, it is perfectly suited as a tapas dish, and we offer it in small slices or cocktail-snack size. Mini dice-shaped chorizo pieces are also really well-suited for Mediterranean oven dishes or salads.
