The dried sausage product group has always played a prominent role within Compaxo, and this is reflected in approximately 120 years of experience. In the past, Compaxo's sausage makers strove to stimulate the drying process in a variety of creative ways.

The cabanossi is a spicy, herby kind of sausage, mixed with paprika and garlic. Though other dried sausage types have a comparable production process, things are a little different for cabanossi. Despite this, we consider the cabanossi to be a member of the dried sausage family, given the fact that there are crossovers in the production process.


The cabanossi is a Polish delicacy, and in Polish is spelled Kabanosy. The product has been made in Polish butcher shops since the 1920s. The name of the product derives from 'Kaban', which in Eastern Polish dialects is another word for pig. Within Poland, there are dozens of varieties of this sausage.

Compaxo has been making cabanossi since the end of the 90s, and because we consider it a real snack product, we primarily make it in small sizes. Our cabanossi distinguishes itself further by its light coarse-ground structure, brown-red color, spicy taste and succulent texture.

Compaxo's cabanossi is actually a cross between a fermented and a cooked product. Once a comparable level of acidification (pH value) has been reached, the difference here in comparison to the other types of dried sausage lies in the fact that the cabanossi is intensively smoked over beechwood chips. This smoking process is carried out at no more than 80°C. During the process, the cabanossi is heated above the cooking point of 72°C, whereby it fully cooks and thus achieves its unique taste.


We currently produce a variety of Cabanossi with quite a spicy flavor. We can also make a more mildly spiced variety on request.

Recommendations and facts

Due to its long shelf life when unrefrigerated, cabanossi was often packed as provision for Polish soldiers during the last century. Nowadays many Poles take it with them for similar reasons while hiking in the mountains.
