Together with Ardenne baloney, this is considered to be the most well-known sandwich filling sausage. The spice blend used is very important for this kind of sausage. The used herbs and spices therefore distinguish the flavor. The sausage has a very soft texture , and as a result is loved by small children.
The Pariser is considered to be a variety of Ardenne baloney. Butchers used to combine leftovers from meat pieces with additives, herbs and spices to create a distinguished flavor and subsequently formed a sausage from this mixture.

At Compaxo, the Pariser is cooked and ground to a mid-coarse structure, while the sausage still has a soft texture. In every case, the spice blend contains black pepper, mace, ginger and cardamon. Compaxo's Pariser is pinkish-brown of color.
In the Netherlands, this product is usually eaten in slices, partly due to the fact that this product is very soft. For this reason, we primarily sell this product in slices, or as slicing logs for customers who wish to slice the product themselves. Currently, we consider the Pariser to be and make it as a type of ‘kookworst’ (cooked sausage), which is really only cooked. We also cut this baloney variety into slices, which can easily be cubed and can therefore be used as a component in pasta dishes.
